Yam Casserole
Whether you’re taking a side dish to an event, hosting a holiday meal, or simply want something and tasty to serve, you’ll be sure to enjoy this family tradition of ours. It’s a great spin on the yams with marshmallows Momma made when I was a child. (She even switched to this recipe after she tried it!)
Pumpkin Chocolate Chip Muffins
Want to make everyone who enters your house drool because your kitchen smells amazing? These moist and tasty muffins will do the trick! They go together quickly and can be enjoyed while still warm. They speak “autumn” to all who give them a try.
Taco Salad
One type of food we craved while living in Scotland was Mexican, so we had to improvise. Getting the right ingredients was a challenge, but when I could find tortilla chips I made this tasty Taco Salad. It quickly became a staple dinner–quick and easy to make after a day of teaching.
Homemade Soft Cheese
When I first tried this recipe a few years ago, my BFF responded, “I like cheese!” It then became my Christmas gift (along with some homemade red pepper jelly) to many friends and coworkers. The beauty of this basic recipe is that you can adapt it to suit the taste of those who will be enjoying it.
Rhubarb Crumble
I’ve carried this winner of a recipe for over 35 years now. Personally, I’d rather this (or any) crumble over a cake most any day. Find some rhubarb and give this easy treat a go!
Carrot Cake
There’s no way you want to miss this recipe! Even the “I don’t really like cake” eaters will enjoy this moist treat.
Sticky Toffee Pudding
Enjoy one of Scotland’s newest and best contributions to the dessert world. This dense, moist cake topped with a toffee sauce and served with whipped cream or heavy cream will satisfy all who try it.
Welsh Christmas Kuchen
Every family needs traditions, especially at Christmas. Our house when I was growing up was full of them, thanks to Momma. This bread is a whole-family favorite, and could be one of yours, too. There’s still time to get it made and serve it for your Christmas morning breakfast!
Cranberry Apricot Relish
Be sure to try this quick and easy side dish for your holiday celebration this year. You’ll have it in the dish and ready to chill in 15 minutes!
Savory Pumpkin Soup
Pumpkin has become a magical word in the food and drink industry in the last few years. But many of us grew up with eating pumpkin products, especially in the fall. This yummy and warming soup will satisfy just about every palate. It comes courtesy of my sister-in-law, Betty!
Sour Cream Pear Pie
Lake County has been famous for its pears for a very long time. Since moving here I have come to appreciate the humble pear much more, and one of our favorite pear recipes is this delightful one I received from a dear neighbor. Make one to usher in the fall season, or any time of year for a special treat.
Whoppers
One of my favorite and most used recipes from Mom Madison is that of the incredible cookie, the Whopper. (She named it this, so I hope I’m not infringing on a burger company.) The first time she made them for us, I remember Dad bragging on them and insisting they be huge.
Broccoli and Pasta Salad
Summertime is fast approaching and everyone looks forward to grilling and eating outside. Sometimes you need to feed a small army at a potluck, and sometimes you’ll want to make this tasty and filling salad just for your family so you can enjoy the leftovers for a few days.
Green Chili Chicken Enchiladas
“Momma” Sherwood’s casserole is always a favorite for her family, and it will be for yours, too.
Fresh Strawberry Pie
June was always the month when we enjoyed a LOT of fresh strawberries. I think we ate them at every meal some days. Eating fresh fruits and vegetables was one way I learned to appreciate the seasons. For guests Momma would make a fresh strawberry pie and lather it with mounds of fresh whipped cream.
Cream Cheese Coffee Cake
Gone are the days when women made a point to invite each other over for a visit, a cup of something, and perhaps a little treat. We’re now in the days of drive-through coffee, texting, and cupcakes on the run. Let’s change this, ladies; here’s a great and easy recipe that will motivate you to bring back “visiting.”
Momma’s Pie Crust
Momma never told me I couldn’t accomplish my dreams. This included entering baked goods … in the Adult Division … when I was only 13 years old.
Cream Scones
I would have to say that by far my most favorite food while living in Scotland was the scones. They sometimes came shaped as triangles, but most often in rounds, and were available in every tea shop, grocery store, and fish & chip shop.
Devonshire Cream Substitute
To enjoy a cream scone at its best, you must top it off with Devonshire cream and homemade jam. You can as quickly mix up a bowl of this yummy substitute.
Strawberry- Pineapple Jam
Homemade jam was a highlight on our breakfast table. Momma made several kinds each summer, depending on what fruit she could get free, or for a very low price. Usually she complained about the price of sugar. The fruit was usually the cheapest ingredient. Strawberry-pineapple became a family favorite, and as I remember, one of the easiest to make.
“Mom” Gunderson’s Cinnamon Rolls
Gladys Gunderson, the Dean of Women at Bethany Bible College, was not only an amazing woman of God and surrogate mom to us girls in the dorms, but was famous for her cinnamon rolls.
Sausage Gravy & Biscuits
Daddy loved biscuits and gravy almost as much as he loved Momma. She could make delicious gravy from any meat, but our favorite was from fresh breakfast sausage.
Coconut Layer Cake with Boiled Icing
With 10,000 egg-laying hens on the chicken ranch, Momma had more eggs than she knew what to do with. One of her favorite spring recipes was for a moist coconut layer cake.
