Devonshire Cream Substitute
If you’ve never tried Devonshire cream (also known as Clotted cream), but are a lover of butter and whipped cream, then you will go nuts over this British delight. Imported versions can be purchased through stores such as World Market, or online through English Tea Store. There are many recipes available to make your own…but it is a lengthy process. One possible challenge to making one’s own is the availability of unpasteurized cream or unhomogenized cream.
So, I am pleased to share with you a recipe from a terrific mom and my dear friend, Emily. It’s is a delicious substitute, and you might even have all the ingredients in your kitchen already. The flavor is somewhat different, but is a wonderful way to dress up and enjoy your cream scones.
Devonshire Cream Substitute
8 oz. cream cheese, softened
1/2 cup sugar
1 1/4 cup sour cream
1 1/2 tsp. lemon juice
1/2 tsp. vanilla
With an electric mixer, beat the cream cheese until fluffy. Add the sugar and beat until light. Mix in the sour cream, lemon juice, and vanilla until well incorporated. Chill covered until serving.
