Cream Cheese Coffee Cake
This delicious treat is reminiscent of a “bear claw” from the pastry case at your favorite bakery. It is very quick and easy to put together, and will be the perfect addition to serve a friend you invite for a visit.
Cream Cheese Coffee Cake
1 pkg. (8 oz.) cream cheese, softened
1/3 cup sugar
1 tsp. almond extract
2 cups Bisquick baking mix
1/3 cup milk
1/4 cup sugar
2 Tbsp. butter, softened
1/4 cup jam (any flavor)
1/4 sliced almonds
Preheat oven to 350*F. Grease a 9″ round pan.
Mix cream cheese, 1/3 cup sugar, and the almond extract in a small bowl; set aside.
In another bowl, mix the baking mix and sugar. Add the softened butter and milk and mix until a soft dough forms. Pat the dough gently into the bottom of the greased pan and up the sides by 1″. Spread the cream cheese mixture over the dough. Carefully spread the jam over the cream cheese. Sprinkle with almonds.
Bake 40-45 minutes. It should be golden brown and the cream cheese mixture will look “set.” (If you stick a paring knife into the cream cheese, it will come out clean.) Cool for 20 minutes and then carefully remove it from the pan to your pretty serving plate.
Makes 8 servings. Refrigerate any remaining coffee cake.
